There are Five Exciting Tracks Within the FSHN (BS) Program:

  • Food Science: Business
    • Combine nutrition coursework with classes in business management
    • This study track educates and develops skills in students who desire to work in food processing, regulation and food business arena, both in the public and private sector. This track also prepares students for managerial positions since there is a high demand for people with skills in food science and knowledge of business, accounting, and interpersonal skills. Students learn about food chemistry, microbiology, structure, engineering, safety, regulation, sanitation, quality control, and business.
    • Food Science: Pre-Professional
      • Combine nutrition coursework with classes in business management
      • This study track educates and develops skills in students who desire to work in food processing, regulation and food business arena, both in the public and private sector. This track also prepares students for managerial positions since there is a high demand for people with skills in food science and knowledge of business, accounting, and interpersonal skills.     • Culinology
      • Blend culinary arts with the science of food
      • A new and exciting field involving the blend of culinary arts and the science of food! The Food Science & Human Nutrition Culinology option at the University of Hawai'i at Mānoa is a 2+2 program that offers graduates of Kapiʻolani Community College's Culinary Arts Associate's in Science (AS) program an opportunity to pursue a Bachelor's of Science (BS) degree from the Department of Human Nutrition, Food and Animal Sciences.
    • Sports and Wellness
      • Augment nutrition coursework with classes in exercise science
      • Students who are interested in pursuing a career in sports and wellness, are encouraged to complete course work in applied musculo-skeletal anatomy, exercise physiology (KRS 353 and 354), and nutrition in exercise and sport (FSHN 480). This track prepares students for careers at health clubs, fitness centers, and spas.
    • Pre-Professional Human Nutrition
      • Prepare for post-baccalaureate study in medicine, dentistry, nutrition, or other graduate program
      • This course of study allows students to study other areas of science, foods, and nutrition. With guidance from their advisor, students can design a course of study to meet their course requirements to prepare them for different aspects of applied nutrition, food science, post- baccalaureate studies in other health professional programs (medicine, dental, pharmacy), or an advanced research degree in nutrition or other biomedical sciences. However, this course of study does not meet all the undergraduate academic course work requirements of the Academy of Nutrition and Dietetics.

    Recommended College Courses during High School:

    The courses listed below are recommended for high school students to complete through a dual credit program such as Early College when in high school. These courses meet degree general program related requirements for the UH Manoa BS in Food Science & Human Nutrition program, taken prior to admission to the program:

    General Academic Courses:

    • ENG 100: Composition I
      • Placement into ENG 100
    • FSHN 185: The Science of Human Nutrition
      • *Prerequisite - None
    • CHEM 151: Elementary Survey of Chemistry
      • Program requires CHEM 161 , this course is a prerequisite for CHEM 161. Placement into CHEM 161 is an alternative via campus placement exam
    • MATH 140: Precalculus
      • Prerequisite: MATH 134 Precalculus: Elementary Functions (Same at MATH 135 Precalculus at the University of Hawaiʻi Community Colleges)

    *Prerequisites are courses or other background that must be completed PRIOR to enrollment. Prerequisites are REQUIRED for registration. Please contact program coordinator or advisor for information on placement into courses as there are multiple methods of placement per campus.
